Butternut Squash Soup
Butternut Squash
Dried Chilies
Sea Salt to taste
Coconut Cream


2 Loafs of Sourdough Bread cut into bite size chunks (Rosemary & Garlic Flavor)
6 Celery Ribs Chopped # 2 cone
20 Garlic Cloves # 1 Cone
1 Tbs. of Turmeric
2 Tbs. of Tarragon
4 Tbs. of Fresh Rosemary minced
2 Tbs. Oregano
2 Tbs. of Thyme
2 Tbs. of Dill
1 Tbs. of Sage
2 Tbs. of Chipotle Powder
Sea Salt to taste
2 Cups of Grated Pecorino Cheese # 1 Cone
½ Cup of White Wine
1 Cup of Olive Oil

Pre-Heat the oven to 350 F degrees, meanwhile
Mix all the herbs and the cheese with the wine and Olive oil, add the bread chunks one fourth at a time and blend well until all the bread is blended. Place in the Oval bake dish in a 350 F. Preheated oven and bake for 15 minutes or until brown, mix every once in a while so its all crispy.

Mashed Potatoes with Yams
10 Potatoes Cubed
2 Cups of Water
1 Tbs. Sea Salt
½ Cup of Coconut Butter
1 Tbs. Baking Powder

Cook the Potatoes in the 7 Qrt. Roaster with 2 cups of water at medium heat wait till the valve clicks and then turn to low. Cook for 20 minutes or until soft, (without draining the water) add the Coconut Butter and Baking Powder while the potatoes are hot.  Mash quickly until silky and serve

Waterless Broccoli
Minimum Moisture

Cranberry Sauce
2 Bags of Fresh Cranberries
1 Cup of Maple Syrup
1 Tbs. of Cinnamon

Wash the cranberries and place in a 4 Qrt. Roaster, add the maple syrup and 1 Tbs. Of Cinnamon.  Cook at medium heat or until the valve clicks at 185 degrees approximately. Turn to low and let them cook for 30 minutes or until is somewhat the resemble of Jam. Let it cool and serve.

Caramel Flan
¼ Cup Agave Syrup
8 Eggs
¾ Evaporated Milk
1 can of Condensed Milk
2 Tbs. of Amaretto Liquor
2 Tsp of Orange Rind

Pour the Agave syrup in the pudding pan or a 9” cake pan, meanwhile mix the rest of the ingredients in a high speed blender for 45 seconds, add on the top of the agave lined pudding pan. Place 2 inches of water in the 3 Qrt Sauce pan and place the pudding pan inside the 3 Qrt.  Cook in bain marie inside the three quart with the cover for 30 minutes or until you insert a knife in the center comes out clean, let it cool and invert into a plate and serve.

Apple Blossoms
Maple Syrup

Cut the apples in half using a paring knife to make incisions that are in the shape of a triangle all the way through the core and around the apple, give a little turn and you will have a beautiful flower look a like,
Then place in the 11” skillet and drizzle it with the maple syrup or agave syrup 2 Tbs. of water and cinnamon, turn to medium, when the valve clicks turn to low and continue baking on the top of the stove for 15 minutes. You can do the same thing in the oven and bake at 350 F for 20 minutes.

Persimmons Cake
2 cups of Unbleached Organic Flour or Buckwheat Flour.
1/ Cup of Rice Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1 Tbs. Cinnamon
1 cup of Coconut Sugar Crystals

Mix the above ingredients first, then add:
6 Persimmons Grated fine
2 Ripe mashed Bananas
1 cup of Dried Cranberries
2 Tbs. of Amaretto
Orange Rind from 2 oranges
Lime Rind from 1 lime
1 Cup of Agave Syrup
4 eggs
1 Cup of melted Coconut butter.

Mix all together by hand rigorously for 5 minutes or until is all well mixed.
Grease the 11” skillet with a little of the coconut oil and pour the cake batter in it until is ¾ full and bake on the top of the stove at low heat for 30 minutes or until a knife inserted in the center comes clean.
